The Indigo

A favorite last-minute cocktail, months in the making, the Indigo is a perfect example of the forward thinking and rewards inherent in wildcrafted herbal honeys and cordials. Once you've brought together the finest harvest Spring and Summer have to offer, you will reap the rewards all year long, with little further effort. Bits of feral passionflower vine steeped in aromatic wild honey and succulent blackberries positively saturated in Tito's Vodka come together to make the perfect little somethin' to warm the bones and soften the spirit on even the frostiest of Winter eves.


In Summer, fill a jar with ripe blackberries, wild or otherwise,
and cover with four parts Tito's Vodka and one part sugar.

Fill a separate, smaller jar with the Passionflowers (Passiflora spp.)
and cover with your favorite local honey.

Let both jars sit for as long as you can bear -- the longer the better,
as the flavor of the berries and the soothing quality and exotic notes
of the passionflower will grow more pronounced with time.

When you can wait no longer, place a heaping couple
of tablespoons of the blackberry cordial, along with whole fruits,
into your favorite glass with the Passionflower honey to taste. 

Top off with Topo Chico mineral water or enjoy neat.
