My New Favorite Food

+ Dandelion Fritters +

  • 10+ flowering dandelion tops per person
  • Coconut Oil (or whatever frying oil you prefer)
  • 1 egg
  • 1 to 2 tablespoons coconut milk (or whatever milk you prefer)
  • Pinch of salt
  • Optional: 2 tablespoons finely ground cornmeal (or whatever flour you prefer)

Mix egg, coconut milk milk, salt, and cornmeal (if using). You can leave the batter as it is or season it with whatever you'd like. So far I've experimented with a smoked paprika and a curry variation, both with excellent results. You could add honey and vanilla for a sweet fritter. Be creative with whatever you have on hand.

Heat a generous couple of tablespoons of the coconut oil in a hot skillet.

Coat each flower in the batter and fry in oil until golden brown (fritter should sizzle immediately when you put it in the pan or else your oil needs to be hotter).

Flip and cook lightly on other side.

Serve with anything and everything...

Note: Gather Dandelions only where you know for certain that they have not been sprayed w. chemicals.
